Meet Diego Barcellos de Carvalho, the Brazilian mixologist inspired by the Far East.

For our latest feature cocktail we’re talking to World Class Brazil winner Diego Barcellos de Carvalho about how a trip to a South Pacific island inspired him to create something magnificent.

How do you go about creating drinks? Do you have a particular style?

My first step is identifying the base spirit – do I want vodka, rum, gin etc.? After this I look at flavours – am I looking to make a citrusy cocktail? Maybe something spicy? Then I start creating, using the best of what my country has to offer, namely our wide range of delicious fruits. I have a modern style that ensures I always find the perfect balance of ingredients in an interesting way.

What was the inspiration for Moorea Volcano?

The cocktail was inspired by the beautiful South Pacific island of Moorea - Tahiti’s next-door neighbour - and the generous hospitality I received when I was in French Polynesia.

It contains dragon fruit and papaya, flavours that represent both Moorea and my homeland of Brazil. I also use a homemade syrup infused with coriander seed to give it an even more intriguing flavour.

Tell us a bit about your bar.

Mr Lam is a smart Chinese restaurant that sits behind huge floor-to-ceiling windows in the affluent residential neighbourhood of Lagoa. The menu offers exquisite Chinese food enriched with a hint of Brazilian flavour, which has definitely influenced me in my work. The techniques and rituals that the Chinese use to create their food inspire me – I now use tea in many of my cocktails.

And finally, what do you love about your job?

Being able to provide my customers with colourful cocktails and memorable evenings.
