Today we’re talking to WORLD CLASS Australia winner Luke Ashton about how he reinvents ingredients to create great tasting cocktails.
You have a unique approach to mixology, how do you go about creating a cocktail?
My inspiration comes from everywhere. It could be something I have tasted or smelt recently, or even based on a memory. I then use this as a starting point to select my ingredients and create a memorable drinking experience.
I like my drinks to be fun and irreverent, but always delicious. The ingredients I use are often antiquated or uncool, and I try to use them in a way that makes you rethink them completely.
Do you have any favourite flavours or ingredients?
I think the elements of spice and bitterness are my favourites. They help create length and complexity to cocktails, which are often the characteristics that set a good cocktail apart from a great one.
Tell us a little about your bar.
We’ve got a unique point of view at Vasco. We’re a rock and roll bar, we serve Italian food and we also pride ourselves on the quality and range of our drinks menu. We normally have around 18 cocktails available to order at any one time.
It’s a relaxed, casual environment and the walls are full of rock and roll memorabilia. Wherever you look, you can breathe in the unmistakable essence of Vasco.
And finally, what do you love about your job?
Absolutely everything. It’s probably easier to say what I don’t enjoy, and that’s cleaning up in the early hours of the morning. I love everything else.
